Here’s a video of Dominique Ansel baking religieuses. Formerly the pastry chef at Daniel he has his own shop on Spring Street. Religieuses are said to resemble nuns in their habits hence the name. Hmmm…all I know is these little choux pastry filled with custard look delicious. The way the eggs slide into the mixer at 00:10 definitely qualifies as food porn. I love how he gets into the spirit of American holidays and decorates them as a bunny, pumpkins, a French person, Santa. Magnifique!
